Asparagus Risotto
The Asparagus risotto is a typical dish served in the area around Bassano del Grappa and Badoere, and it is prepared in April and May. Boil the asparagues. let the cool and divide the leads from the rest, cut into pieces the tender part of stems. Prepare abase with chopped onion and fry with butter, olive oil, add the chopped asparagus , brown cook for a while and add the rice ( vialone nano would be the best type for this recipe) wet in with some white wine and start adding a light vegetable or chicken stock, little by little, stirring continuously. Take away from fire and add the parmesan cheese. butter and stir. Place on plaits and garnish surface with the asparagus leads salted in butter and a bit of finely chopped parsley. and ...we wish you a good lunch !
